This protein packed delight of savory goodness can be made for breakfast, lunch or dinner! The roasted jalepenos give it a smoky kick, while the spinach, green onion and garlic offer important nutritional benefits. Reduce inflammation, support immunity and fight free radical damage (signs of aging) with this "Lighten-Up"-friendly recipe that will make you drool . . . Yum!
In a medium pan, heat 1 TBSP EVOO and add:
3-4 organic green onions- thinly sliced
1 garlic clove- minced
1-2 roasted jalepenos (prep ahead of time)- diced
Saute for 2-3 min and add:
1 cup lentils (pre-made)
2 cups organic spinach
2 TBSP Veggie or Bone Broth
Once spinach wilts and broth reduces, add:
4 organic eggs- scrambled
1 tsp cumin
1 tsp cracked pepper
pink salt
Cook eggs throughly and place aside. Place tortilla(s) in pan over medium heat.
2 ezekiel (or brown rice) tortillas- burrito size
1-2 oz organic raw white cheddar cheese- grated
Allow cheese to melt and evolve evenly... place egg scramble on top and plate.
Top with cilantro, hot sauce and avocado.
